Tribute to The Knotts

Our good friends Tyler and Lacey moved today. *sniff* *sniff* Yesterday we had them over for lunch and hung out with them a bit for one last time (as CO residents that is) I really hope to visit them and hope they visit us SOON! We are super glad to have met them and to have had the opportunity to be friends with them. We love and will miss them.

Who loves Uncle Leif???




My little nephew Lincoln is in LOVE with his Uncle Leif. I tried and tried to get him to like me better but it did not work out! The little stinker. I still love him.

Close to my parent's house is an old iron ore mine. While drilling years ago they hit a spring and had to abandon it because it filled so quickly with water. It is 60 meters deep (196.850394 feet according to Leif). The water is so crystal clear, it is pretty incredible.

My dad saddled up the horse for the kids ride Noah was not sure about him (still) and of course Zana is in HEAVEN!

We went to my parents house in Cedar City Utah this past week to pick up Noah and Zana from a wonderful week with the grandparents, and we wanted to see our new nephew/cousin Tristan Fawson. My little tiny sister Christine had her first baby june 13th and I LOVE him. He is so CUTE!
Also the 24th is Pioneer Day and in Utah that means parade time! So we packed up all the clans and headed down to main street to watch the parade. I have to admit some of the floats were pretty dang creative! We had a blast.

My new favorite summer treat!



Watermelon Salsa...... yes watermelon salsa!! It is so good and I am in LOVE!

Kiwi-Watermelon Salsa

1 cup diced peeled kiwi fruit (about 2 large or 3 small)

1 cup diced watermelon

1/3 cup finely chopped red onion

1 tablespoon finely chopped cilatntro

2 teaspoons minced seeded jalapeno pepper

2 teaspoons lime juice

salt to taste


In a medium bowl, gently stir together the kiwi, watermelon, onion, cilantro, and jalapeno, until well combined. Add the lime juice and salt stir to combine. Serve immediately or refrigerate in an airtight container for up to a day. Serve with tortilla chips.

For the 4th of July we went to The Rockies game with our super awesome friends Chris, Andrea and crew. We had a blast! First stop was some delicious Mexican food, then on to the game via light rail. (The kids loved that) We were a bit worried Ewan would not like the game, we were wrong he LOVED it! The wave was his favorite thing, every time it came around hands went up. The fireworks were RAD! One of the coolest finales I have ever seen. Noah and Ewan were NOT fans, as soon as they started Noah jumped up and said "I think it is time to go home." The light rail ended up being a fail as we did not get on until after midnight. Tired kids to say the least, oh well they had a BLAST. And bubbles and WHITE keds will never be the same!!
